Denominación de Origen

A Denominación de Origen (DO) is a geographic quality designation that links a product’s quality or characteristics exclusively or essentially to its geographic environment — including both natural factors (climate, altitude, soil) and human factors (traditional practices, processing knowledge). In El Salvador, coffee DOs are managed by the ISC and governed by the Ley de Marcas y Otros Signos Distintivos (reformed April 2013, Title VI). They are registered and legalized by the Centro Nacional de Registros (CNR).

EU Recognition

All of El Salvador’s coffee DOs are inscribed and recognized by the European Union. EU recognition guarantees the origin and quality of these products in the European market and grants legal protection against misuse of the designation. It also improves competitive position against uncertified origins.

This is directly relevant to Kaiserblick Specialty Coffee, which is located in the Apaneca-Ilamatepec DO region and targets the European market.

El Salvador’s Coffee DOs

Café Bálsamo-QuezaltepecCentral coastal range (La Libertad)
Café Tecapa-ChinamecaEastern volcanic (Usulután, San Miguel)

Café Apaneca-Ilamatepec is the DO covering all six Kaiserblick farms. A DO is a collective, state-granted right — Kaiserblick can use this designation on its export lots, communicating legally protected geographic origin to European buyers.

  • Nature: concession granted by the state; a public collective good
  • Governing body: an Órgano de Administración inscribed in the CNR, composed of representatives from the Ministries of Economy and Agriculture plus elected producers
  • Regulations: each DO has a Reglamento de Uso y Administración (usage and administration rules)

Requirements to Establish a DO

  1. Define the zone and produce georeferenced maps
  2. Demonstrate the product-zone link (quality characteristics tied to geography)
  3. Submit application by supply chain actors
  4. Create an Órgano de Administración
  5. Draft a Reglamento de Uso y Administración
  6. Prepare a business plan
  7. Develop technical competencies in the coffee institutions

Strategic Value for Kaiserblick

The DO adds several dimensions to Kaiserblick’s Green Coffee Trading offer:

  • Legal origin protection in the EU: buyers in Germany, France, Belgium etc. can verify origin under EU DO recognition
  • Price premium tool: DO status is an additional quality signal beyond cupping scores alone
  • Competitive differentiation: not all El Salvador producers actively leverage the DO; prominently featuring it on export documentation and marketing sets Kaiserblick apart
  • Trust signal: EU-regulated origin designation carries more weight with European specialty buyers than self-reported origin claims
